Easy To Make Chocolate Cake

I don’t know anyone who doesn’t like chocolate or cake, so both together is always going to be a delicious treat. I actually had a friend who couldn’t eat chocolate because he’s allergic to dairy, and bless him it’s not his fault but I felt so sorry for him, I love chocolate, and I couldn’t imagine not being able to eat it. This is really easy to make and if you just wanted to make the cake with no icing , there’s no mess at all, just one bowl and mixing spoon. You can add any chocolate topping you like, I used chocolate buttons because it reminds me of a memory when my brother and I, use to go to a lovely coffee shopping my mum used to take us too when we were younger, and they use to make this amazing chocolate button cake, so mine really reminds me of that which is a nice memory to look back on. Obviously it would make a good cake for afternoon tea, a birthday cake or if you just fancy some chocolate cake, that is totally okay too!

You Will Need:

  • 2 eggs
  • 50g cocoa powder
  • 125g self raising flour
  • 350g butter
  • 175g caster sugar
  • 1tsp baking powder
  • 2tbsp milk
  • 225g plain chocolate
  • 225g icing sugar
  • Chcolate buttons

Method:

  1. Mix together the caster sugar, eggs, butter, baking powder, cocoa powder and self raising flour in a bowl. If the mixture is too thick, add some milk to it. Then spread in to a 18cm round cake pan and bake for 35-45 minutes. Take out the oven and leave to cool for at least an hour.

2. To make the topping, put the butter and chocolate in a microwaveable bowl and put in the microwave for 30 seconds at a time, until completely melted. Alternatively in a heatproof bowl, place it over the top of a saucepan of simmering water.

3. Beat until the icing is smooth and glossy. Set aside and leave to thicken.

Add half the icing sugar and beat again and then add the other half, and beat until you have a light and fluffy icing.
