Delicious Rolo Cupcakes Recipe

I’m going to start off by saying these are the best cupcakes I have ever made! They are great even for the person who isn’t a fan on Rolos, such as my boyfriend. I can tell you how good they are, I made them on the Wednesday and they were all gone on Friday, and there’s only 2 of us in our household, so that gives you an idea. The recipe makes 10, however if you require more, just double the ingredients, or perhaps you don’t want as many and your just having a small get together with a few friends, just halve the ingredients, however I would make at least 10 as these will be going down nicely. Perfect for party’s, get together’s like I mentioned, or maybe you just have a sweet tooth, these will be perfect. I’ve split the recipe into 2, the first half being how to make the fudgey (clicks add to dictionary) cupcakes, the next half being how to make the chocolate frosting, which I can’t stress how much better this tastes to shop bought ones. Also I just thought they’d be perfect for a rainy day as well!

To make the cupcakes

You will need:

  • 100g of milk chocolate
  • 100g butter
  • 125g of brown sugar
  • pinch of salt
  • 2 eggs
  • 1tsp vanilla extract
  • 50g self raising flour
  • 2 rolls of Rolos or 1 Rolos tube
  • 1 small tin of carnation caramel

1.In a saucepan melt the butter and then add the chocolate. Remove from heat and leave to cool slightly.

2. In a bowl mix together the eggs, vanilla extract, sugar and salt and then add in the chocolate and butter mixture and stir well.

3. Add the flour into your chocolate mixture.

4. Add in your  Rolos and mix in well.

5. Spoon half the mixture into the cake cases and add a teaspoon off the caramel into the center of your mixture.

6. Apply another layer over the top and bake in the over for around 15mins, depending on your oven. They may feel under baked but once cooled they will become a bit firmer, but have their fudgey texture.

To make the buttercream.

You will need:

  • 2 tbsp cocoa powder
  • 100g butter
  • 400g icing sugar
  • the rest of the Rolos to decorate
  1. Beat the butter until light and fluffy. Add the cocoa powder and half of the icing sugar and beat until it looks like buttercream. It may not look like its getting there at all to start of with, you might think your doing it wrong, but keep mixing and it will. Add the rest of the icing sugar, mix again and then add the vanilla extract.

2. Pipe on your icing, or just use a spoon to dollop some on, and add a Rolo in the center, and enjoy!
