I’ve never thought about putting cauliflower in macaroni cheese before, but when it comes to thinking about it, you can actually put anything in this recipe, but then I guess it becomes a pasta bake more than a macaroni cheese haha. This recipe creates something rather filling and in fact I find it feels me up for the rest of the evening. Yay no room for tempting treats! I actually think the cauliflower makes it taste much better and gives it more flavour. I was watching cooking programme the other day actually, and it annoys me how oil some chefs put into everything. I know they’re are the professionals, but as they’re are pouring it I’m like nooooooo stop! I don’t really like putting oil in things as it is, because I find it so greasy, but I allowed a tablespoon for this.
IngredientsÂ
- 250g pasta
- cauliflower florets (put in how many you want, depends on how much you like it)
- 3 cloves of garlic minced
- 1 tablespoon of oil
- 115g sour cream
- 60ml of milk
- 60g of grated mozzarella
- 125g of grated cheddar
- 30g of parmesan
Method
1.Preheat the oven to 180 degrees. In a large pot of boiling water, cook pasta according to the package instructions, within the last 3 minutes of cooking, add the cauliflower and drain.
2. Heat a tablespoon of oil in the pan and add the garlic. Then stir in the pasta, cauliflower, sour cream, milk and cheeses.
3. Put in a baking dish and bake for 12-15mins.
4. Enjoy!

Nevermind the cauliflower it’s the sour cream that I’ve never thought of before!
