I am trying to eat breakfast more, as I never use to eat it in the morning, but I’m definitely better than what I was. With it being the most important meal of the day as well, I need to get in the habit of eating it every morning. This is super quick and easy, so if you don’t have a lot of time on your hands, then this is perfect! If I am honest though when I had this the other day I put a dollop of peanut butter on it, and lets just say, I have gone off peanut butter haha. It definitely still works without peanut butter and is healthier, but a little unhealthy thought crossed my mind… I think this would taste good with a dollop of Nutella!
I must admit it does not look appealing at all, but makes up for it in taste. You could also substitute the blueberries for raspberries or another fruit, if you didn’t like blueberries, and a dollop of yoghurt. I also find that this feels you up as well, so if you have a long time to wait between breakfast and lunch, I would definitely recommend having this as your first meal. It’s not just for breakfast though, it can be for lunch, or an evening snack, instead of reaching for the treats cupboard. Another great thing about this recipe is, there’s not many ingredients involved, doesn’t it annoy you when you find a recipe with like 20 ingredients listed of things you haven’t heard of, and then it comes to a stupid amount in price? Not with this recipe! Anyways I’ll stop rambling and share the recipe with you!
You Will Need:
Serves 2
- 1 cup rolled oats
- 1 1/2 tablespoon of chia seeds
- 1 teaspoon vanilla extract
- 1/2 cup blueberries
- 1 tablespoon honey
- 2 cups almond milk
- Toppings (I used raspberries, blueberries and a dollop of peanut butter)
Method:
- Place all the ingredient into a saucepan and bring to a boil, use a high heat.
- Reduce heat to medium and let simmer for around 10 minutes stirring occasionally otherwise it will all stick to the bottom.
- Serve with your choice of toppings and Enjoy!
