Mini cheesecakes with a twist, instead of a biscuit base, it’s a cookie base instead..
You Will Need:
- 325g plain flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 12 tablespoons of butter
- 110g caster sugar
- 175g brown sugar
- 2 eggs
- 2 teaspoon vanilla extract
- 100g chocolate chips
Cheesecake Layer
- 1 egg
- 60g soured cream
- 225g cream cheese
- 1 teaspoon vanilla extract
- 30g icing sugar
Method
- Preheat the oven to 180 degrees. In a bowl, whisk together the flour, baking powder and salt, and set aside. In a large bowl mix together the butter and sugars.
2. Stir in the eggs and vanilla extract.
3. Mix together the dry ingredients with the wet ingredients.Put half of the mixture into a pan. Sprinkle half the chocolate chips on.
4. To make the cheesecake batter mix together the egg, soured cream, cream cheese, icing sugar and vanilla extract. Pour over the pan of the half of mixture with chocolate chips on.
5. Then put the remaining mixture on top and sprinkle the rest of the chocolate chips on.
6. Bake for 30-40mins. Leave to cool and refrigerate for at least 3 hours. Serve and enjoy!
